摘要
以苦瓜为主要原料 ,添加适量的蜂蜜、白砂糖及其它辅料 ,研制出口感清爽、风味独特、清凉降热、营养丰富、品质稳定的苦瓜汁清凉饮料 ,对生产工艺、关键技术、抗氧化、稳定剂选择进行了研究 ,采用独特的生产工艺 ,有效解决了苦瓜脱苦、护色、稳定等问题 ,提出较佳的配方与生产工艺参数要点。
A refreshing drink containing Momordica charantia juice characterized by refreshing mouth feel, unique flavour, rich nutrients and stable quality was made from Momordica charantia, with the addition of honey, sugar and other ingredients. Studies were carried out on the production process, key techniques, anti oxidation and the selection of stabilizers. The problems of debittering, green colour keeping and stabilizing were effectively solved by the unique processing technology. Good formula, technological parameters and operation essentials were set forth.
