摘要 从绍兴黄酒用麦曲的时间推断,绍兴黄酒工艺成型于南宋。随着麦作物在南方的推广,南方制曲原料由单一的大米发展为大米和小麦。南宋初期,大批北方人流寓南方,将北方制曲酿酒技术传播到南方。绍兴黄酒融合了南北酿酒技术之精华,创造出北方麦曲加南方米曲酿酒的独特的绍兴黄酒工艺。(丹妮) It was deduced from the application age of wheat starter for yellow rice wine that the production techniques of Shaoxing yel-low rice wine generated in South Song Dynasty.During that period,the spread of wheat in south China made starter-making materials develop from single rice to rice and wheat.In the early period of South Song Dynasty,many people migrated from north China to south China,and starter-making techniques and wine-making techniques were also introduced to south China at that time.The produc-tion techniques of Shaoxing yellow rice wine had inherited the essence of wine-making techniques both in south China and in north China.Besides,the unique technique of mixed wheat starter with rice starter for fermentation was developed.(Tran.by YUE Yang)
