摘要
果蔬纸是一种由果蔬制成的休闲新产品,在国内少见报道。其特点为形状像纸,薄而软,在嘴中嚼后可化。在国内少见报道。探讨了以菠菜为主要原料,探讨果蔬纸的加工方法。对果蔬纸质量评价方法、加工工艺进行了研究,得出了最佳工艺参数范围。结论为:所制果蔬纸薄而软,营养易于调控强化,口味良好,色泽、形状诱人,特别适宜牙口不好的老人、儿童食用。
Concocted fruit and vegetable papers consisted of mixed fruit and vegetable. It can control nutrition and organoleptic properties to satisfied people. Reports about this field are few. With spinach to be the main raw material, this paper investigated the methods of valuating fruit and vegetable paper quality. Various facts effecting quality of papers are also been discussed. The best optimum technology parameters are found. The conclusion is: fruit and vegetable papers suit for old person and teenagers to eat. They are also eatable inner package materials.
