摘要
就蔬菜冷冻面条的最佳配方及制作的工艺条件进行分析和探讨。通过对配方及工艺进行逐项实验。结果表明,在考虑相关因素的基础上,采用优水平制作出的面条,经质量评定后,各方面品质均具有良好的表现。
This paper analyses and proves into prescriptions and technology requirements of frozen vegetable noodles. The frozen vegetable noodles are made by excellent level besides considering related elements and the quality evaluated. After experimenting prescriptions and technology one by one, it proved that the noodles are in a good stale and high quality.
