摘要
以大豆分离蛋白 ( SPI)和麦芽为主原料 ,采用复合蛋白酶水解制备活性肽口服液 ,并以大、小鼠为实验对象对产品进行了急性毒性和功能性研究 .实验结果表明 ,本产品外观及口感良好 ,质量稳定 ,食用安全 .与高脂对照组比较 ,给予多肽口服液的中剂量组血清总胆固醇 ( TC)下降极显著 ( P<0 .0 1 ) ,高、低剂量组 TC下降显著 ( P<0 .0 5 ) ,高、中、低三个剂量组的血清低密度脂蛋白胆固醇 ( L DL- C)显著降低 ( P<0 .0 5 ) ,其中 TC分别下降35 .0 %、 5 1 .5 %和 47.0 %;L DL - C降低 37.6%、 5 4 .7%和 5 0 .2 %;同时对血清甘油三脂( TG)也有一定降低作用 ,对血清高密度脂蛋白胆固醇 ( HDL- C)无影响 .
The soybean protein isolate and malt as main material washydrolyzed by compound protease to produce oral liquid of bioactive polypeptide.The acute toxicity and function of the product were studied by rats and mice test.The results showed that the oral liquid of bioactive polypeptide had pleasant flavor and taste,steady quality and had not toxicity.Comparing with hyperlipemia control group,the TC level in middle dose group of feeding oral liquid lowered significantly( P <0 01),the TC level in high and low dose group lowered obviously( P <0 05),and the LDL C level in high,middle and low dose group lowered obviously( P <0 05).The TC in high,middle and low dose group lowered respectively were 35 0%,51 5%,and 47 0%,while the LDL C lowered respectively were 37 6%,54 7% and 50 2%.The oral liquid had some degree to reduce TG but not influenced the HDL C.The results indicated that the product can regulate serum lipid.
