摘要 食源性病原微生物引起的疾病是全球关注的焦点之一。尽管目前食品工业在卫生条件、食品生产、运输及存储等方面取得了不小的进展,但食源性疾病的爆发仍在继续。由于食源性病原体浓度低而难以检测,特别需要一种简单、快速、特异、灵敏、成本低而效益高的测定方法。本文就食源性微生物的分子检测方法进行阐述。 Disease caused by food-borne pathogens are one of the global concerns. Outbreaks of food-borne diseases continue despite considerable progress in sanitation, food production, transportation and storage in the food industry. Due to the low concentration of food-borne pathogens, it is difficult to detect them. In particular, a simple, rapid, specific, sensitive, low-cost and cost-effective method is needed. The molecular detection methods of food-borne microorganisms are mini-reviewed in this paper.
