摘要
采用固定化胰蛋白酶和固定化木瓜蛋白酶分步对大豆分离蛋白进行水解 ,水解后酶解液中大豆肽含量为 1.6 2 8~ 1.70 2mg/mL ,水解度为 5 4.4 %~ 5 7.8%。多肽分子量在 180以下水解度为 11.1%~ 13.5 % ,181~ 2 0 0 0为 11.5 %~ 14 .5 % ,2 0 0 0~ 5 70 0为 2 7.1%~ 2 7.2 % ,5 70 0~ 10 0 0 0为 4 4.7%~ 4 9.6 %。结果表明 :双固定化酶对大豆分离蛋白的水解作用效率高 ,并能有效地将大豆分离蛋白降解为分子量更小的大豆肽。
This paper deals with the hydrolysis of isolated soybean protein with immobilized trysin and immobilized papain for making soy peptide.The content of soy peptide in hydrolysis product is 1.628~1.702mg/mL.The hydrolysis rate of isolated soybean protein is 54.4%~57.8%.The rates of molecular weight of soy pepide are as follows: 11.1%~13.5% for <181,11.5%~14.5% for 181~2000,27.1%~27.2% for 2000~5700,44.7%~49.6% for 5700~10000.The result shows that the double immobilized enzymes are efficient for hydrolyzing isolated soybean protein into soy peptide with much smaller molecular weight.
