系统而简要介绍了膳食纤维的国内外研究现状与发展趋势 ,其中包括其组成与分类、分离制备、理化性质、分析鉴定、生理功能。
The present situation and prospect of studies on dietary fiber home and abroad are introduced briefly and systematcally. They involve its characteristics, classify, extraction methods, physiological properties, preparations and analysis, biological functions, modification and utrilization in food industry.
