摘要 〔目的〕为了解碘酸钾碘盐的稳定性及其影响因素。〔方法〕通过不同碘盐种类和存储方式 ,模拟用户日常食用盐的方式进行取样 ,测定盐碘含量。〔结果〕盐碘含量变化与盐样的颗粒大小、存储方式密切相关 ,在湿度较大的环境下出现盐碘的迁移现象。〔结论〕在江南潮湿的环境中 ,建议居民食用小包装碘盐 ,减少碘盐食用周期 ,且加盖保存以防潮解 ,防止间隔性地出现高碘或碘摄入不足现象。 Objective To find out the stability of polasssium iodine salt and the factors that influenced it. 〔Methods〕 We used different kinds of iodine salt and different deposition conditions, sampled according to the ordinary users fashion, and determined the contents of iodine in the salt.〔Result〕 The contents of iodine were significantly associated with the size of salt grain and storage fashion .In much dank condition the iodine in salt would move gradually.〔Conclusion〕 In the dank condition in South China, in order to prevent the denizen from sometimes eating too much iodine and sometimes too little, they should eat little casing iodine salt to curtail the edible cycle, and cover above to prevent the salt from deliquesce.
