摘要
介绍了用啤酒工业废糟渣酿造酱油的工艺途径、操作要点和质量指标,开拓了啤酒废糟渣再利用的新途径。
The production of soy sauce from BSG and other brewing wastes was introduced. The quality parameters of the soy sauce were also reported. This paper descrihed a new way of brewing wastes reuse.
