摘要
目的了解淄博市食品中污染物及有害因素的污染状况,确定高风险食品,为执法部门加强监管提供科学依据。方法按照《2016年国家食品污染和有害因素风险监测工作手册》等相关方法对淄博市食品中污染物及有害因素进行检测。结果 2016年全年共检测各类食品样品1 088份,超标111份,超标率为10. 20%。其中化学污染物及有害因素监测样品数量672份,超标率为1. 34%(9/672),超标指标包括玉米面中的玉米赤霉烯酮及赭曲霉毒素、海燕鱼鱼干中的镉、绿豆芽中的吲哚乙酸;微生物及其致病因子检测416份,超标率为24. 52%(102/416),其中水产品中的致病性弧菌及肉与肉制品中的沙门氏菌检出率较高。结论淄博市食品安全状况整体优良,但食品中食源性致病菌污染较为严重,应加强针对性监管,防止食品安全事故发生。
Objective To understand the pollution status of pollutants and harmful factors in food in Zibo City,and to determine the high-risk food,so as to provide scientific basis for law enforcement departments to strengthen supervision. Methods According to the 2016 National Food Pollution and Harmful Factors Risk Monitoring Work Manual and other related methods,the pollutants and harmful factors in food in Zibo City were tested. Results In 2016,a total of 1 088 food samples were tested,with111 samples above the national standards. The over-standard rate was 10. 20%. A total of 672 food samples were detected to have chemical pollutants and harmful factors,with an over-standard rate of 1. 34%( 9/672). The over-standard indicators included zearalenone and ochratoxin in cornmeal,cadmium in dried seagull fish and heteroauxin in mungbean sprout. The microorganisms and pathogenic factor of a total of 416 food samples were detected,with an over-standard rate of 24. 52%( 102/416),among which the detection rate of pathogenic vibrio and meat and meat products in aquatic products was relatively higher than others. Conclusion The situation of food safety was good in Zibo City,but the pollution of foodborne pathogenic bacteria in food are serious. Targeted supervision should be strengthened to prevent food poisoning events.
