摘要
用组织化学定位法证实了速冻两个月(-20℃)草莓中存在有活性多酚氧化酶,且主要存在于除去线粒体的上层清液中。用分光光度法测定了它的花色素苷、类黄酮和总酚含量。研究了多酚氧化酶活性的影响因素及最适条件,并测定了7种抑制剂对酶活性的影响。
The existence of active polyphenoloxidase in quick freezed strawberry for two months (—20℃) is proved by Organization Chemistry Orientation Method in this paper. This enzyme exists inthe supernatant fluid removed mitochondrion principally. The con-tents of anthocyanidins, flavonoids and total phenols is determined with speetropho-tometric method. This paper also studies the factors influencing the activity of polyphe-noloxidase and its most approprate condition, and discusses the influence of seven restrain-ers on the activity of this enzyme.
