摘要
采用国际标准方法———ISO413 4法 ,对几种地方家禽肌肉中的谷氨酸进行了测定 ,结果表明 :国内 3种地方家禽肌肉中游离谷氨酸的含量显著高于A A鸡 ,是A A鸡含量的 2至 3倍 ;华都黄鸡中 ,平均质量为 1 0kg的游离谷氨酸含量明显高于质量为 1 2kg和 1 4kg的 ;地方家禽肌肉游离谷氨酸的含量均为胸部高于腿部。
Free glutamic acid contents in several chickens were determined by using international standard method-ISO4134. The results show that the free glutamic acid contents of 4 Chinese local chickens are 2 to 3 times higher than that of A-A chicken. The free glutamic acid contents of Huadu chicken of 1.0 kg in average weight is notably higher than chickens of 1.2 kg and 1.4 kg in weight. For chinese local chickens, the free glutamic acid contents in breast are higher than that in leg.
