摘要
本文以新疆产鸡冠花(Celosia cristata L.)花序为实验材料,利用离子沉淀法提取鸡冠花黄色素,并用离子交换树脂进一步纯化;从光、温度、还原介质、氧化介质、蔗糖、防腐剂、金属离子等对色素稳定性的影响进行了初步研究。结果表明:离子沉淀法提取鸡冠花色素实验室工艺简单易行;色素不仅耐光性和耐热性好,而且耐氧化和耐还原性也好,适用于中性条件下使用。
Using the inflorescence of Celosia cristata L. of Xinjiang, yellow pigment has been extracted by precipitation method and purificated by ion exchange resin. The experiment also include the preliminary study of the effects of light, temperature, pH value, reductant, oxide, sucrose, preservative and metal ions on its stability. It proved that precipitation method is easy and simple extracting process. The pigment is strong in resistance against not only heat and light but also reductant and oxide. It can be applied to neutral condition.
