摘要
对八眉猪几项主要肉质生化指标的测定发现,八眉猪肌肉中含有较高的脂肪(为长白猪的2.88倍)(P<0.01),水分和蛋白质含量较低(P<0.05);在所分析的17种氨基酸中,八眉猪肌肉中的赖氨酸、胱氨酸和谷氨酸比例较高(P<0.05),缬氨酸比例较低(P<0.05)。在皮下脂肪和肌间脂肪中,八眉猪的硬脂酸、油酸和总饱和脂肪酸(SFA)比例较高(P<0.05,P<0.01),豆蔻酸、亚油酸、总不饱和脂肪酸(UFA)和总多聚不饱和脂肪酸(PUFA)比例较低(P<0.05,P<0.01);棕榈酸比例在皮下脂肪较高(P<0.05),而在肌间脂肪较低(P<0.01)。
In this article,some biochemecal traits of meat quality in Bamei pigs were determined. The results indicated that the musules of Bamei pigs contained higher percentages of fat,lower percentages of moisture and protein,and higher percentages of lysine,cystine,glutamic acid, lower percentage of valine. Bamei pigs contained higher percentages of stearic aeid,oleic acid,and saturated fatty acid (SFA)lower percentages of myristic acid, linoleic acid, unsaturated fatty acid (UFA) and polyunsaturated fatty acid (PUFA)In subcutaneous fat and intramasculor fat ,The percentage of palmitate of Bamei pigs was higher in the subcutaneous fat but lower in intramuscular fat.
