酵母菌发酵制备叶酸功能食品的研究 被引量:1

摘要 从筛选出的一株酵母菌为发酵菌株,研究其高产叶酸的发酵条件和加工合理性。对所含叶酸及氨基酸等进行了检测,制成叶酸功能食品。 A yeast was taken as original yeast to produce folic acid by fermentation, The fermentation conditions of high folicacid yield and technological rationality were studied. The content of folic acid and amino acid were determined, and folic acidfunction food was manufactured.
