桑葚花青素的提取工艺优选

Research on Extraction Technology of Mulberry Anthocyanins

摘要 桑葚是桑科落叶乔木桑树的成熟果实,含有丰富的营养成分,其花青素分子结构小,成分稳定,是提取花青素的良好原料之一。本文以浙江省内栽培种植的大十品种为研究对象,筛选出了提取桑葚花青素的最佳工艺。并以10个不同品种的桑葚为研究对象,对桑葚果汁和果渣中总花青素类的含量进行研究,为桑葚花青素的进一步加工及产品开发提供科学数据,也为桑葚果渣的再利用提供理论依据。 Mulberry fruit belongs to the Morus genus of the Moraceae family. It is a rich resource of bioactive compounds. Mulberry is one of the best materials to purify anthocyanins, and molecular structure is relatively simple,easy to stable. This study selected the best extraction technology by researching Big Ten varieties of Mulberry which cultivate in Zhejiang province. The total anthocyanins contents and yields of mulberry juice purification and mulberry marc purification of 10 varieties mulberries materials also researched. This provide a reference for developing utilization.
