喷雾干燥法制备红枣黄酮微胶囊的工艺研究 被引量:1

摘要 本文以新疆红枣黄酮为芯材,采用喷雾干燥法制备红枣黄酮微胶囊,以包埋率为评价指标,研究胶囊复合壁材(糊精与阿拉伯胶)配比、固形物含量以及芯材与壁材的比例关系三个因素对红枣黄酮微胶囊化效果的影响。结果表明,喷雾干燥法制备红枣黄酮微胶囊的最佳工艺条件为糊精与阿拉伯胶比例为1:1,芯材与壁材配比为1:2,固形物含量为25%,包埋率可达到83%。本研究为红枣深加工提供了理论基础。 Flavonoids microcapsules were prepared by spray drying using jujube flavoids extracts as the core material, and using the embedding rate as the evaluation index. The influence of dextrin-arabic gum ratio, solids content and the ratio of core material to wall material on embedding rate were studied. The results showed that the optimum technological conditions as follows dextrin-arabic gum ratio 1:1, the ratio of core material to wall material 1:2, solids content 25%, the final embedding rate can reach 83% with spray drying for flavonoids microcapsule of jujube. The results provide an important theoretical basis for further study of jujube processing.
