摘要
利用复合冷却装置和普通贮奶罐对刚挤出来的牛奶进行冷却和贮存,测定牛奶冷却效果和菌落总数。结果表明,经复合冷却装置冷却的牛奶,挤奶后1h内温度可降到4℃以下,菌落总数小于1×105CFU/mL;而普通贮奶罐冷却的牛奶,挤奶后4h以上温度才能降到4℃,菌落总数大于4×105CFU/mL。这说明,与普通贮奶罐相比,复合冷却装置可显著提高牛奶冷却效果,牛奶菌落总数大幅度降低,达到了优质乳对此项指标的要求。
The milk just squeezed was stored by the multiple cooling device and the ordinary milk-storage tank, respectively. The cooling effect and bacterial colony number of the milk was measured.The result showed that the temperature and bacterial colony number of the milk stored in the multiple cooling device dropped below 4℃. and 1×105CFU/mL within 1 hour, respectively, while the milk stored in ordinary milk-storage tank need over 4 hours to drop its temperature below 4℃, and its bacterial colony number was 4×105CFU/mL this moment. Compared with the ordinary milk-storage tank, the multiple cooling device could enhance cooling effect of the milk remarkably, and reduce the bacterial colony number of the milk by a large margin, achieving the requirement of high quality milk with low bacterial colony number.
