摘要
提出了测定聚对苯二甲酸乙二醇酯(PET)中乙醛在液体食品中的迁移量的气相色谱质谱法。研究了温度、时间、模拟物(水性模拟物、酸性模拟物、酒精类模拟物)对乙醛迁移行为的影响。结果表明,对于同一食品模拟物,PET中乙醛的迁移量随着温度升高、时间的延长而增大。PET中乙醛在酒精类模拟物中的迁移量远远大于其在水性、酸性和脂肪模拟物中的迁移量。
An analytical method using gas chromatography mass spectrometry(GC-MS)has been developed for the quantification of acetaldehyde migration from PET bottles into liquid food.The effect of time,temperature and food stimulants(the aqueous stimulant,the acid stimulant and the alcoholic stimulant)has been tested on the migration of acetaldehyde.The results showed storage time and temperature were positively correlated with migration of acetaldehyde in all stimulants.Different food stimulants led to different levels of acetaldehyde migration at the same storage temperature.The migration level of acetaldehyde in the alcoholic stimulant was much higher than the one in the acid stimulant and the aqueous stimulant.
