晋南牛与和杂一代牛育肥试验比较研究 被引量:5

Fattening Comparison between Jinnan cattle and Simmental Taihang taxa Crossbred generation with Japanese black cattle

摘要 本试验旨在通过高档育肥试验,对晋南牛与和杂一代(日本和牛×中国西门塔尔牛太行类群)进行育肥性能和肉质性状比较研究。选择体重(301±11.24)kg的和杂一代与晋南牛各15头进行了12个月的高档育肥试验,测定了和杂一代与晋南牛的育肥性能和肉质性状。结果表明:和杂一代牛的日增重为0.96 kg,比晋南牛的日增重0.87 kg提高10.34%,差异显著(P<0.05);和杂一代牛的屠宰率和胴体产肉率分别为58.3%、83.3%,比晋南牛分别提高2.82%和1.09%(P>0.05);剪切力和大理石纹等级在数值上晋南牛优于和杂一代牛(P<0.05);其他指标差异不显著(P>0.05)。结论,晋南牛在增重性能和产肉性能方面低于和杂一代牛,但肉品质优于和杂一代。因此,借鉴高档肉牛育肥饲养管理经验开发利用晋南牛进行高档肉牛生产具有广阔的市场前景。 The experiment was conducted to study the fattening traits and meat quality of the F1 generation cattle( Japanese black cattle × Simmental Taihang taxa) and Jinnan cattle. It lasted for 12 months fattening under the same nutrient and feeding management for 15 healthy F1 generation( Japanese black cattle × Simmental Taihang taxa) cattle and another15 Jinnan cattle. The results showed that the average daily gain of crossbreed cattle( 0. 96 kg) was 10. 34% higher than Jinnan cattle( 0. 87 kg)( P < 0. 05). The slaughter rate and Meat rate of carcass were 2. 82% and 1. 09% higher for crossbreed cattle than Jinnan cattle( P > 0. 05),Shear stress and marbling grade in value is better for Jinnan cattle than crossbred cattle( P < 0. 05). Other indexes showed no significant difference( P > 0. 05). Experiments show that Jinnan cattle on growth performance and production performance of meat were lower than the F1 generation cattle,but meat quality of Jinnan cattle was better than and the F1 generation cattle. Therefore,The development of Jinnan cattle with fattening experience of high- grade beef cattle production will have wide market prospects.
