摘要
目前农产品安全问题备受关注,建立农产品质量安全可追溯系统已经成为国内外的发展趋势。由于蜂产品与一般农产品有着不同的生产和加工方式,对蜂产品质量追溯就必须精确到蜂产品生产的各个环节,尽可能多的考虑影响蜂产品质量的因素,实现"源头控制,过程可追溯,质量有保证"的目标。因此,基于HACCP原理,通过分析蜂产品生产过程各个环节的危害概率,来确立影响蜂产品质量的关键因素,并确立关键质量采集及控制点,为后续建立蜂产品质量追溯系统奠定基础,进一步推动智慧蜂业的发展。
At present, much attention has been paid to food safety issues,so constructing a food quality and safety traceability system has become a development trend of both at home and abroad. Bee products have different ways of production and processing with agricultural products, thus, the quality traceability of bee products must be accurate to honey production of each link, as much as possible to consider the factors affecting the quality of bee products, to achieve the goal of traceability source control, process, quality assured. Therefore, the article based on the principle of HACCP, through the analysis of the damage probability of bee products production process each link, to establish the key factors affecting the quality of bee products, collecting critical control point, and lay the foundation for subsequent bee products quality traceability system, further promoting the development of wisdom bees industry.
