低场核磁共振技术在油脂掺伪鉴别中的应用 被引量:10

摘要 应用低场核磁共振(LF-NMR)检测技术结合主成分分析法(PCA)对多种品牌纯葡萄籽油以及其掺有其他食用油脂的掺伪葡萄籽油进行检测分析。研究表明, PCA可明显区分葡萄籽油、大豆油、玉米油、稻米油的LF-NMR弛豫特征数据;并且PCA得分图上能有效区分葡萄籽油中不同油脂的掺伪比例,掺伪比例越高区分效果越好,实验验证可靠。实验结果说明基于掺伪油脂的LF-NMR弛豫特征数据,结合主成分分析可实现对其是否掺伪、掺伪比例快速、有效的鉴别。 Low field nuclear magnetic resonance(LF-NMR)detection technology combined with principal component analysis(PCA)was applied to determine a variety of brand pure grape seed oil and mixed with other edible oil adulterated samples of grape seed oil.Study showed relaxation characteristic data of grape seed oil,soybean oil,corn oil and rice oil could be clearly distinguished.In addition,the different ratio of adulteration in grape seed oil could be easily differentiated according to corresponding principal component scores.When adulteration ratio of other edible oil increased,distinguishing ability would be more pronounced,and experimentally verified correctly.Therefore,experimental results showed that the LF-NMR relaxation characteristic data based on the adulterated oil and the principal component analysis could be used to identify the adulterated oil and its adulterated proportion quickly and effectively.
