摘要
啤酒废酵母是啤酒生产过程中的重要副产物之一,同时啤酒废酵母中含有丰富的营养物质,蛋白质、核酸、氨基酸等物质含量高;而麦芽根又是啤酒酵母生产中的另一重要副产物,从中提取的5′-磷酸二酯酶能够有效提高酵母抽提物中5′-核苷酸的含量,对啤酒废酵母的综合利用,将会产生巨大的经济效益和社会效益。
Waste brewer's yeast was the by-product in the beer brewing and rich in protein,nucleic acid,amino acid etc.Malt root was another important by-product in beer brewing,the 5'-phosphodiesterase extracted from which can effectively improve the content of 5'-nucleotide in yeast extract.Comprehensive utilization of waste brewer's yeast will create great social and economic benefit.
