萝卜红色素的提取工艺及其稳定性的研究 被引量:10

摘要 目的:优化萝卜红色素的提取工艺,并对萝卜红色素的酸碱、热以及光稳定性进行研究。方法:以红心萝卜为原料,提取率为指标,研究了温度、pH、时间、料液比对萝卜红色素提取率的影响,并通过响应面法优化萝卜红色素提取条件;然后对萝卜红色素在不同温度、pH、光照条件下的稳定性进行了探讨。结果:萝卜红色素最佳提取工艺条件为:提取温度为43.07℃、提取pH为2.88、提取时间为3.65 h、料液比为1∶4,在此条件下提取率为65.21%。萝卜红色素稳定性试验结果表明:萝卜红色素在酸性条件下稳定性良好,对热比较稳定,但不耐高温;室外光照下萝卜红色素较室内光照下有所降低。结论:该工艺提取萝卜红色素简单可行、提取率高。萝卜红色素耐热性较好,碱性条件和光照对萝卜红色素稳定性影响较大。萝卜红色素应在避光、酸性条件下保存。 Objective :To optimize the red radish pigment extraction,acid-base stability,thermal stability and photostability of the pigment were studied. Methods :red radish was raw material and the extraction rate was the index,the effects of temperature,pH,time and ratio of material liquid on the extraction rate of red radish pigment were studied. The response surface method was used to optimize the extraction conditions. Then the stability of red radish color under different temperatures,pH and light conditions were discussed. Results :The best extraction technology conditions for red radish color were as follows :extraction temperature 43.07 ℃,extraction pH 2.88,extraction time 3.65 h,and ratio of material liquid 1 ∶ 4. Under the above conditions,the extraction rate was 65.21%. The pigment showed good stability under acidic conditions and was stable to heat,but not resistant to high temperature. The red radish pigment was decreased under the outdoor light than under the indoor light. Conclusion :The process is simple and feasible,and extraction rate was high. The pigment has good heat resistance;however,alkaline and light have great influence on the stability of the pigment. Therefore,red radish pigment preservation should avoid light and acidity.
