摘要
以沙棘甾醇作为实验药物,采用Schaal烘箱贮藏法,研究沙棘甾醇对油脂的抗氧化作用。结果表明,沙棘甾醇对大豆油和猪油都具有一定的抗氧化作用,对大豆油和猪油氧化的抑制率在6.56%~33.43%,随剂量的增加其抗氧化的强度逐步提高,呈正相剂量依赖效应,对猪油氧化的抑制率高于大豆油,约为大豆油的1.4~1.6倍。沙棘甾醇抗氧化作用弱于维生素C、二丁基羟基甲苯(BHT)和维生素E,强于胡萝卜素。沙棘甾醇分别与维生素C、BHT按2∶1、1∶1和1∶2复配对大豆油和猪油氧化的抑制率较沙棘甾醇提高31.42%~84.02%,较维生素C提高0.21%~26.76%,较BHT提高12.86%~48.48%,明显优于单一组分,具有协同增效作用。
Seabuckthorn sterol was used as an experimental drug,and the anti-oxidation effect of seabuckthorn sterol on oil was studied by Schaal oven storage method. The results showed that seabuckthorn sterol had certain anti-oxidation effect on soybean oil and lard,and the inhibition rate of soybean oil and lard oxidation was 6.56% ~ 33.43%. The anti-oxidation intensity gradually increased with the increase of dose,showing positive phase dose. The dependence effect,the inhibition rate of lard oxidation is higher than that of soybean oil,which is about 1.4 ~ 1.6 times that of soybean oil. Antioxidant effect of seabuckthorn sterol is weaker than vitamin C,dibutylhydroxytoluene(BHT)and vitamin E,stronger than carotene. The inhibition rate of seabuckthorn sterol and vitamin C and BHT in soybean oil and lard by 2 ∶ 1,1 ∶ 1 and 1 ∶ 2 was 31.42% ~ 84.02% higher than that of seabuckthorn sterol,and 0.21% ~ 26.76% higher than vitamin C. BHT increased by 12.86% ~ 48.48%,which was significantly better than single component and had synergistic effect.
