摘要
食用菌采后的物流保鲜,对提升食用菌的保鲜期和品质质量以及扩大食用菌食用范围有重大意义。深入研究冷链物流背景下食用菌采后物流保鲜技术,以食用菌生产基地的香菇为试验研究对象,研究冷链物流背景下采后预冷处理、气调保鲜技术和包装覆膜对香菇贮藏效果的影响。通过比较试验香菇在采后一定时间后的感官质量、含水量、含糖量和含可溶性蛋白质量变化结果,实现冷链物流背景下食用菌采后物流保鲜质量的研究。实验结果表明,食用菌产地预冷处理、气调保鲜技术和包装覆膜均能起到食用菌的保鲜效果,且二氧化碳和氧气含量分别为(10.5%~13.5%)和(2.5%~3.5%)时的食用菌保鲜质量最佳。
Thy logistics and preservation of edible fungi after harvest are of great significance for increasing the freshness period and quality of edible fungi and expanding the edible range of edible fungi. After studying the cold chain logistics background, edible fungi post-harvest logistics preservation technology, The effects of post-harvest precooling treatment,air-regulating preservation technology and for packaging coating on the storage effect of mushroom were studied by using shiitake mushrooms from edible mushroom production base in a certain area. By comparing the results of sensory quality,water content, sugar content and soluble protein quality of mushroom after a certain period of time after harvesting, the quality of edible mushroom preservation was studied under cold chain logistics. The experimental results showed that precooling treatment of edible fungi, air conditioning preservation technology and packaging film can all play a role in the preservation of edible fungi. is The best preservation quality of edible fungi.is.
