摘要
全氟烷基物质(PFASs)是一类具有疏水疏油特性的化合物,在生物体内易富集,有一定的毒性。目前,关于全氟有机化合物的研究已逐渐成为国际环境健康领域的研究热点。饮食是人体全氟烷基物质暴露的主要途径,了解动物性食品中全氟烷基物质的污染水平和残留现状具有重要意义。对全氟烷基物质的危害、污染途径以及残留分析等方面进行综述,拟深化对全氟烷基物质的了解,对开发复杂基质中多种化合物及检测方法提供参考。
Perfluoroalkylated substances(PFASs)are a class of compounds with hydrophobic and oleophobic properties,which are easily enriched in organisms and have certain toxicity.At present,research on perfluorinated organic compounds had gradually become a research hotspot in the field of environmental health in the world.Diet was the main way to expose human perfluoroalkyl substances.It was important to understand the pollution level and residual status of perfluoroalkyl substances in animal foods.This paper reviewed the hazards,contamination pathwaysand residue analysis of perfluoroalkyl materials,and intend to deepen the understanding of perfluoroalkyl substances,and provided references for some researchers to develop simultaneous detection methods for multiple compounds in complex matrices.
