油脂脲包工艺中氨基甲酸乙酯的鉴定、检测及去除

摘要 氨基甲酸乙酯是一种致癌性物质,尿素和乙醇是其合成的前体物质,因此在纯化油脂的脲包工艺中具有产生氨基甲酸乙酯的可能,对产品品质具有潜在的安全风险。利用GC及MS方法对油脂脲包工艺中是否产生氨基甲酸乙酯进行了鉴定,利用外标法对氨基甲酸乙酯含量进行测定,并对脲包工艺中氨基甲酸乙酯的产生条件进行了考察,同时考察了油脂中氨基甲酸乙酯的去除方法。结果表明:油脂在脲包工艺中会有微量的氨基甲酸乙酯产生,含量为27 mg/kg,主要是在50℃以上的包合阶段产生,通过140℃以上真空蒸馏可以较完全地去除油脂中的氨基甲酸乙酯。 Ethyl carbonate is a carcinogenic substance,urea and ethanol are both precursors of its synthesis,so it is possible to be produced in the process of urea inclusion for oil purification,leading to potential safety risk to product.The formation,content,production conditions,and removal of ethyl carbonate in oil during urea inclusion were identified,researched and detected by GC and MS,respectively.The results showed that ethyl carbonate could be produced in the urea inclusion process of oil,and the content was 27 mg / kg,which was produced in the process of inclusion above 50 ℃.Ethyl carbonate could be removed completely from oil by vacuum distillation above 140 ℃.
