对粮食霉变的实质、过程和表征进行了介绍 ,并重点讲解了粮食霉变中脂类、糖类和蛋白质的生物化学变化。
The substance,process and apparent of grain mildewed was introduced in this paper.It also put stress on the biochemistry changes of fat,carbohydrate and protein during grain mildewing.
