摘要 甘蔗中的色素物质具有良好的抗氧化活性。甘蔗提取物具有良好的稳定性,石灰澄清、长时间加热都基本不影响其抗氧化能力;其抗氧化能力与其色值特别是多酚类色素物质密切相关。甘蔗在世界上很多地方大量种植,与其它抗氧化活性物质提取材料相比更容易获得。采用吸附树脂从甘蔗制糖过程中提取抗氧化活性物质,可将抗氧化活性物质的提取与制糖工艺相结合,在提取抗氧化活性物质的同时获取高质量的糖品,易于实现产业化。 The colors in sugarcane indicate strong antioxidant properties. Antioxidants in concentrated sugarcane extracts obtained from sugarcane products, using the resins process for extraction, have good performance in stability, as even prolonged heating or clarification would not make any reduction of its antioxidant capacity. The antioxidant capacity of the sugarcane extracts correlates very well with their color, for the high antioxidant polyphenol components form a large part of the sugarcane color bodies. Sugarcane is mass cultivated in large areas of the world for sugar-making, which is easier to obtain for extracts compared with other extraction materials. It also enjoys advantages in industry that the extract manufacturing process can share some phases with the sugar manufacturing process.
