摘要
探讨了钙剂的选择依据及其在牛乳中的合适添加量,阐述了钙剂、稳定剂和多聚磷酸盐对高钙液体乳热稳定性的影响机理,确定了生产高钙牛乳的最优配方是钙剂(乳酸钙)用量为60mg/100mL、CMC—Na为0.3%、多聚磷酸钠为0.2%。
The principle of choosing calcium fortifier and the optimum additive quantity were studied in this paper. We discussed the influence of calcium fortifier, stabilizer and poly-phosphoric acid sodium on the stability of high calcium fluid milk. The optimum formula was L-Calcium Lactate 60mg per 100mL fluid milk, CMC-Na 0. 3 wt. % , poly-phosphoric acid sodium 0. 2 wt. %.
