清香型小曲酒的香味组分特点及风味特征 被引量:31

摘要 清香型小曲酒的香味组分以酯类和醇类为主 ,其次是有机酸类和羰基化合物。酯类总含量低于醇类总含量 ,酯类以乙酸乙酯为主 ,含量鲜有超过150mg/100ml的 ,乳酸乙酯次之 ,乙酸乙酯与乳酸乙酯的比例为1∶1.0~0.6;酸类以乙酸和乳酸含量最高 ,两者之和占总酸90 %以上 ,两者的含量均在40mg/100ml以上 ,两者之比约为1∶0.8;清香型大曲酒的总酯与总酸比值约为5.5∶1 ,而清香型小曲酒的总酯与总酸比值则为5∶4 ;醇类的量比关系为正丙醇>异戊醇>异丁醇、仲丁醇>正丁醇 ,异戊醇∶异丁醇=1∶0.6左右 ;羰基化合物总量不多 ,以乙醛和乙缩醛含量最高 ,约占总量的90 %以上 ,乙缩醛比乙醛为1∶1.0~0.6。清香型小曲酒的风味特征是以乙酸乙酯为主体的协调复合香气 ,清香纯正 ,入口微甜 ,香味悠长 ,落口干爽 ,微有苦味。(一平) The aroma constituents of Fen-flavour Xiaoqu liquor are mainly esters and higher alcohols, and then organic acids and carbonyl compounds. The total content of esters is lower than that of the alcohols and the main one is ethyl acetate (content less than 150mg/100ml) and then ethyl lactate with their ratio 1∶1.0~0.6; The acids are mainly acetic acid and then lactic acid (above 90% of the total acid) with their content above 40mg/100ml and their ratio 1∶ 0.8; The ratio of total ester and total acid is about 5.5∶1 in Fen-flavour Daqu liquor but 5∶4 in Fen-flavour Xiaoqu liquor; The quantity relative ratio relationship of the alcohols is n-propanol > isoamylol> isobutanol, secondary butyl alcohol> n-butanol with the ratio of isoamylol and isobutanol about 1∶0.6; The carbonyl compounds are mainly acetal and aldehyde (above 90% of the total) with their ratio 1∶1.0~0.6. The flavour charateristics of Fen-flavour Xiaoqu liquor are the complex flavour blended mainly by ethyl acetate, pure Fen-flavour, and slight sweetness and bitterness.(Tran by YUE Yang)
