钙是人体骨骼生长和调节生理功能的重要物质,但缺钙现象非常普遍,为满足人们补充钙质的需要,各式各样的补钙产品和强化钙的食品也越来越多。本文简述了钙对人体的作用,并对开发强化钙食品的钙源选择和钙的食品强化进行了概述。
Calcium is a key mineral for the normal g rowth and d evelopment of the skeleton as well as for participating in important physi olog ical functions.However,it is g enerally evident that a sig nificant p roportion of the population fails to achieve the recommended calcium intakes.M ore and more calcium-supplement products and food products fortified with calc ium are developed for consumer requirement.The article introduced calcium's f unction,selection of calcium sources and intensifying food with calcium.
