摘要
微生物发酵茶饮料是一种新兴的保健茶饮料。茶叶经过微生物发酵后品质得到很大的改善,现在研究开发的微生物发酵茶饮料对解决中低档茶滞销和茶叶的综合利用深加工开发都具有积极的意义。本文对应用于茶叶发酵加工中的微生物种类及其特征、主要微生物发酵茶饮料的研究进展和微生物在茶叶发酵中的应用前景进行展望和探讨。
The tea drink fermented by microorg anisms is a new he alth beverag e.The quality of tea is g reatly improved after being fermented by microorg anisms.It is positive for sales promotion and comprehensive utili zation of mid-low-g rade tea and the research on tea drink fermented by m icroorg anisms.This paper summarizes the species and characteristics of mi croorg anisms applied in tea.The current situation of major tea drink ferme nted by microorg anisms is reviewed and the future applications of microorg anisms in fermentation of tea are also mentioned.
