摘要
在对米糟一般化学成分的含量与特性进行分析的基础上,采用已烷抽提脱脂、热水洗涤除糖等方法,制备食用大米浓缩蛋白。原料中蛋白质回收率达94.6%,产品中蛋白质含量达72.5%。
On the basis of analysis of the contents and characteristics of general components of rice dregs, rice protein concentrates were prepared through hexane extraction to remove fats, hot water washing to remove sugar. Results showed the yield of protein in raw material was up to 94.6%, and the protein content in the product 72.5%.
