摘要
采用溶液法和研磨法分别制备了番茄红素与环糊精的水溶性包结物 ,紫外 可见吸收光谱研究表明 ,包结物水溶液的光谱特征不同于 β 环糊精水溶液及番茄红素在四氢呋喃 水混和溶剂中的光谱特征。产物的水溶性以及光谱特征的变化证实了包结物的形成。包结物水溶液的特征吸收谱带 (λmax)出现大的变化 ,可能是面 面聚集的番茄红素分子被环糊精包结后 。
Water soluble inclusion compounds of β cyclodextrin with lycopene were prepared by two methods: (1) complexation in solution and (2) complexation by kneading. It was found that UV Vis spectra of the inclusion complexes in water are different from those of lycopene in water miscible organic solvents (tetrahydrofuran) and β cyclodextrin in water, which confirms the formation of the inclusion complexes. Specific interactions of lycopene and β cyclodextrin cause great changes in absorbance maximum ( λ max ) of lycopene . It is considered that the inclusion complexes in water are formed as supermolecular aggregates with nanometer size, after card pack type lycopene is included by β cyclodextrin in molecular level.
