摘要
以绞股蓝和鲜奶为主要原料,配以蔗糖、稳定剂等,采用正交试验、发酵条件试验、物料配比确定稳定剂的筛选,优选出最佳配方,研制出了一种具有营养和保健功能的绞股蓝酸奶。
Gynostemma Pentaphyllum and fresh milk as main raw materials mix with cane sugar, stablizer, etc., the stablizer was confirmed by testing of correctitude and ferment condition. The excellent prescription was elected and the Gynostemma Pentaphyllum yoghurt with health care function of nutrition was prepared.
