摘要
SDS-PAGE是蛋白质分析、比较和特性鉴定的有效方法。生猪肉与加热终温度不同的猪肉经蛋白质提取后进行SDS -PAGE电泳分析 ,从其分离谱带与加热终温的关系可对其进行检测。
SDS-PAGE is an effective method for protein analysis,comparison and characteristic identification.The protein in fresh pork and different heated end-point pork is extracted,then it is SDS-PAGE.We can detect the different heated end-point pork from the relation of electrophoretic strip and different heated end-point.
