介绍了一种分解大米中过敏原的方法。通过单因素试验和响应面试验,确定了木瓜蛋白酶分解大米过敏原的最佳条件为:温度39℃,pH值7.45,时间25h,酶添加量132.93mg/(5g)。
A method for decomposing rice papain is presented. By means of single-factor experiment and response surface method, the optimum conditions for decomposing rice allergen with papain have been found to be that: temperature 39℃, pH value 7.45, time 25 h, enzyme added 132.93 mg/(5 g).
