摘要
对甘肃省主要种植马铃薯品种的淀粉含量以及淀粉中直链淀粉和支链淀粉的比例进行了定量分析与比较.结果表明:不同品种马铃薯淀粉中直链淀粉和支链淀粉含量不同,由此造成不同品种马铃薯淀粉性质的差异.
The contents of starch, amylopectin, and amylose of main varieties of potato cultivated in Gansu province is determined quantitatively and compared with each other. The results show that the content of amylose and amylopectin of different varieties of potato is different, resulting,therefore, in the difference in the characteristics of different potato starches.
