摘要
试验研究了黑豆皮红色素的最佳提取条件及光、pH值、温度、氧化剂、还原剂、金属离子、糖类、氨基酸等因素对其稳定性的影响。结果表明 ,黑豆皮红色素最佳提取工艺是 :95 %乙醇与 0 .1%HC1按 1:2混合作提取剂 ,物料与提取剂比为 1:4 0 (g :mL) ,温度 70℃ ,浸提时间 10 0min。Ca2 +、Cu2 +、Zn2 +对此色素有增色作用 ;Fe3+对其有破坏作用 ;该色素对光、氧化剂、还原剂不稳定 ;低温下相对稳定 ;氨基酸对它的破坏作用很大 ;糖。
The extration of pnaseolus red pigment and the pigment stability to sunlight,pH,temperature,oxidant,reductant,amino acid and metal-ion were studied optimum extraction coditions are as follows:extraction agent 95%alcohol-0.1%HCl(1∶2),ration of sample to extraction agent 1∶40,temperature 70℃,and time 100 min.The maximum absorbtion wave-length of the extract is 520nm.The mental-ions,Ca 2+ ,Cu 2+ ,and Zn 2+ ,can strengthen the pigment colouv The pigment is unstable to sunlight,oxidant ,and reductant,but it is stable to low temperature relatively.Amino acid affects it a lot,while acid and alkali affect littel.
