等电沉淀分离酪蛋白方法的探讨——兼对黄石市场鲜牛奶质量分析 被引量:20

摘要 牛奶中酪蛋白含量是衡量牛奶质量的一个重要指标 ,采用蛋白质等电沉淀法可测定其含量。本文探讨了等电沉淀法分离酪蛋白的最适pH值、温度以及牛奶中酪蛋白理论含量等问题 ,报道了对黄石市场鲜牛奶酪蛋白含量的测定结果 ,并对此法在海关。 The content of casein can be used as a index of quality for the milk, which can be determined by the method of isoelectric precipitation. Experiment and statistic data showed that the casein yield was the largest when the milk was precipitated in the conditions of pH4.8 and 55℃,and that the casein content of milk should be 2.6g/100mL. In the paper ,we determined the casein content of milk in the market of Huangshi. We can also differentiate between powdered milk and dried whey, and monitor the quality of milk with the method.
