摘要
肌肽(β-丙氨酰-L-组氨酸)是存在于动物机体组织中的水溶性二肽,具有多功能的抗氧化性质。本文综述了肌肽的抗氧化特性及其作用机理。
Carnosine (β-alanine-L-histidine) is a water-soluble dipeptide, naturally presented in animal's tissue , with multifunctional antioxidative activities. In this paper, the antioxidative function of carnosine and its mechanism are received.
