摘要 稻米水分含量的变化是引起籽粒裂纹发生,影响整米率的主要因素。潮湿米粒快速干燥或干燥籽粒浸水、回潮均会产生严重的裂纹。干燥后润谷可以减少裂纹的发生。在生产、加工、贮藏过程中,可通过正确调节稻米水分含量来减少裂纹发生,提高稻米的加工品质。 The variation of rice moisture content is the most important factor that causes the formation of fissures in rice kernels and affects head rice yield. Drying wet rice rapidly and soaking or rewetting dry rice kernels imperatively results in severe fissuring. However tempering properly after drying can reduce fissuring occurrence. And properly controlling the moisture content of rice kernels during rice production, milling and storage may decrease fissuring and increase head rice yield.
