壳聚糖低温保鲜去壳青稞莲子的研究 被引量:5

摘要 研究了在1~3℃的条件下壳聚糖对去壳青稞莲子的保鲜作用,结果表明:用1.5%壳聚糖涂膜后,去壳青稞莲子的呼吸高峰推迟了10d,且呼吸高峰降低了30%;过氧化氢酶的活性受到明显的抑制,同时过氧化氢酶的活性高峰推迟了5d;总糖变化趋势平缓,接近于新鲜莲子;贮藏25d后的失重率为1.04%,仅为对照组的38%。 The preserving effect of chitosan on hulled highland barley lotus seeds under 1~3 ℃ was studied. The results showed that the respiratory peak of hulled highland barley lotus seeds was delay 10 days and the peak level decreased by 30% after being overlaid with 1.5% chitosan, the activity of catalase was inhibited remarkably, and the duration of activity peak was delayed 5 days, the changing trend of total sugar content was gentle, which was close to fresh lotus seeds, at the 25th day, the weight loss was (1.04%),only 38% of that of the controlled group.
