摘要
为了探讨用酶从牛腱中提取胶原蛋白的最佳工艺配比,采用胃蛋白酶和无花果蛋白酶消化法,进行了酶和加入酶量对提取结果的影响研究,给出了酶对胶原提取影响的因素.结果发现,使用胃蛋白酶进行消化时,酶与牛腱的重量比为0 1时效果最佳,而使用无花果蛋白酶时,0 01的配比最佳.
During the extraction, it is important to choose the class of enzyme. But, in order to ensure the biologic activity, purification and next work, the result of extraction is much influenced by enzyme and its quantity. The influence of pepsin and ficin on the collagen picking up is studied, and the result show that the efficiency and outcome are the best when the qualities ratio of pepsin to cattle tendons is 0.1, and the ratio of ficin to cattle tendons is 0.01.
