摘要
对薯蓣科植物参薯的天然紫色素提取工艺和稳定性进行了研究。直接用水浸提效果良好。在酸、热、光、糖、 维生素C和金属离子等存在的条件下,参薯色素稳定性较好,因此可以广泛应用。
This paper reports the extraction proceeding and stability of the natural purple pigment from Dioscorea alata .Water as solvent, the pigment is well extracted. The good stability in different acidity, temperature, light, sugar, vitamin c and metal ions condition indicates that the purple pigment can be used widely.
