本文旨在阐明碱处理菜丝与甜菜细胞变性度的关系。甜菜细胞变性度可用显微镜或旋光法测定。适当碱处理菜丝。
The aim of the Paper is to show the relation of the denaturazing rate of beet cells to the alkali treatment of cossettes.The denaturazing rate of the beet cells can be determined microscopically or polarimetrically.Suitable alkali treatment of the cossettes accelerates the denaturation of the beet cells and fix pectin into the pulps.
