本文简单介绍了茶多酚的组成、特性、制备方法和安全性 ;且较为全面地综述了茶多酚的抗氧化性能、保健与药理作用以及在食品工业中的应用 ;并指出在应用中存在的问题 。
The article simply introduces tea polyphenol's constitution, characteristic, distill method and security. Besides, its antioxidant ability, health function and the usage in food industry are detailedly reviewed. Moreover, the article points out the defects of tea polyphenol in practical applications and anticipates its development prospect.
